Episode II: Attack of the Cloves

Last week I did a recipe that I would consider ‘easy’ (Luke’s Hot Chocolate). This week I’m doing a recipe that would be on the ‘difficult’ end of the scale. How about something from the Red Deck food court of the first Death Star? (Didn’t think space stations had food courts, did ya?)

In the 2007 novel Death Star, by Michael Reeves and Steve Perry, Melhanese food is mentioned. It’s apparently an exotic cuisine and is expensive (stormtroopers apparently don’t make much moo-lah). Specifically mentioned is fodu in green fire sauce. For the purposes of this recipe, I have chosen flank steak as the fodu. But I feel you can really substitute any protein here, such as chicken, fish, or even tofu. For the sauce we’ll make a chimichurri. It’s a spicy, flavorful sauce, used in this recipe as a marinade and dipping sauce. I highly recommend it as a chip dip too (tortilla chips work best).

Fodu in Green Fire Sauce

Serves 4

Ingredients:

1 ½ cup olive oil

1 ½ cup fresh parsley

8 cloves garlic (attack of the cloves!)

2 shallots

2 Tbsp. each of fresh basil, thyme, and oregano

Juice of 1 lime

Salt and pepper to taste

1.If you have a food processor, use it – combine all of the ingredients in the bowl of the food processor and combine until finely chopped. If you don’t have a food processor, just be sure to finely chop all the ingredients and combine. Add salt and pepper to taste.

2.Divide the sauce between 2 bowls. We’ll use half as a dipping sauce for later.

In a large baking dish place the steak (or whatever protein you’ve chosen) and pour half the marinade over. Be sure to turn to coat all of the steak. I used a 2lb flank steak. Place in refrigerator for 2 hours.

3.After the steak had marinated, grill it. Use an outdoor grill, or an inside grill pan would work. Cook to desired doneness. Medium rare is about 4-5 minutes per side. Remove from heat, let rest (covered in foil) about 10 minutes. Then slice on the bias and serve. Use the reserved sauce as a dip on the side.
