February is upon us now, the month of hearts, flowers, and looove. And snow. Lots of snow, if you live in the Midwest, like me.

This week’s recipe incorporates a mix of these things…sort of. I’ve picked Red Gourd Soup- red for Valentine’s Day, soup because it’s, well, cold outside. Red gourd soup is a Mandalorian dish, notably served in the city of Enceri on Mandalore. This soup made its initial appearance in Karen Traviss’ 2008 novel Order 66: A Republic Commando Novel. Hopefully this soup is good enough that you don’t need to feed it to the Sarlacc.

Red Gourd Soup

Ingredients:

2 TBS olive oil

2 large Red Kuri squash (this is a winter squash, teardrop shaped and a light red color - If you can’t find it in the grocery, substituting yellow squash would be fine)

1 stalk celery, chopped

2 shallots, chopped

1 12 ounce jar of roasted red peppers, drained and rinsed

4 cups chicken or vegetable broth

1 cup water

2/3 cup sour cream

Salt and pepper

Garlic powder

1.In a large pot, heat the olive oil over medium high heat. Add the shallots, squash, and celery; sprinkle with salt and pepper. Make sure to stir frequently so the ingredients don’t burn. Sautee for about 5 minutes or until the squash is tender. Add a pinch of garlic powder.

2.Add in the red peppers, broth, and 1 cup of water. Cover the pot and bring this to a simmer.

3.Transfer the soup mixture and the sour cream to a blender or food processor. If using a blender, keep the lid slightly ajar as hot liquids will make the lid pop off. (Don’t want red gourd soup all over your kitchen!) Blend or puree mixture until smooth.

4.Divide soup into bowl, sprinkle with some extra sour cream or shredded cheese and enjoy!
