Courtney Cooks Star Wars

Welcome back to Courtney Cooks Star Wars, your blog for Star Wars recipe geekery.

This week I’m tweaking a recipe from my childhood (thanks ma!) for a food from Winner Lose All, a 2012 eBook novella by Timothy Zahn. The story features Lando Calrissian and a few characters from Zahn’s book Scoundrels. In Winner Lose All, smuggler Bink Kitik was on Danteel City eating Shrimpi cups at a tap café overlooking the High Card Casino. Based on the food’s name, I’ll be working with a shrimp themed appetizer for this recipe. Enjoy!

Shrimpi Cups

This recipe makes approximately 15 of the fillo cups.

Ingredients:

1 stick softened butter

1 ½ tsp. mayonnaise

1 jar of Old English cheese spread, softened

¼ tsp. seasoned salt

¼ tsp. garlic powder

½ lb. cooked, peeled, and deveined shrimp

1 package frozen fillo cups

  • 1.In a large bowl, mix the cheese spread, mayo, butter, seasoned salt, and garlic powder. Dice the shrimp and add to the cheese mixture.
  • 2.Preheat oven to 350 degrees. Place the fillo cups on a baking sheet. Fill the cups with the shrimp mixture.
  • 3.Bake cups for about 10 minutes, or until filling is hot and bubbly. Remove and serve while warm.
