After a short two week hiatus, your favorite blog is back (I know you missed it). So there has been much news in the way of Star Wars Episode VII recently, especially in regards to the Expanded Universe books. Seeing as I pull my recipe ideas from food included in all aspects of the Expanded Universe, I was happy to see there will be many new stories on the horizon. I will continue using food and drink from the current EU, and will of course include any new ideas from the new canon.

With that being said, here is this week’s recipe from the current EU. Looking back on my first blogs, I noticed there have been no breakfast foods. Well, fear not breakfast lovers, this week is Hotcakes, a breakfast often made by Mirax Horn. First mentioned in Fate of the Jedi: Outcast by Aaron Allston, hotcakes were often served Corellian-style. There isn’t much more said about them, and the first thing one would think of would be traditional pancakes. I’ve mixed it up a bit here and am using a crepe recipe. I rule at making crepes, and so can you!

Hotcakes

Ingredients:

1 cup all-purpose flour

2 eggs

½ cup water

½ cup milk

¼ tsp. salt

2 TBS butter (not margarine), melted

  • 1.Start heating a large non-stick skillet over medium high heat. In a large mixing bowl, whisk the flour and eggs together. Slowly stir in the milk and water until fully combined. Add the butter and salt last, stir until batter is smooth.
  • 2.Pour about ¼ cup of the batter into the center of the heated skillet. Immediately start tilting the pan around in a circle motion, causing the batter to coat the pan in a thin layer.
  • 3.Cook the crepe for about 1-2 minutes. The bottom of the crepe will be light brown. Flip the crepe over gently, cook an additional 30 seconds.
  • 4.Serve warm crepes with butter and syrup. I imagine ‘Corellian-style’ as this: Heat about 2-3 TBS. of red raspberry jam in the microwave until liquid, pour over the crepes. This is my favorite way to enjoy crepes.
