Welcome back to Courtney Cooks Star Wars, your blog for Star Wars recipe geekery.

Its summertime and that means cookouts and grilling. Everyone knows the basic grill-fare; hamburgers, hotdogs, steaks, barbeque. But what about items for vegetarians? Well, I’ve got you covered fellow veg heads. Today’s recipe would be a great option for vegetarians to take to cookouts, or for non-vegetarians to have at their barbeques for a non-meat choice. Gorba melts are a food that has been mentioned a few times in the Star Wars Expanded Universe, most recently in the novel Legacy of the Force: Tempest by Troy Denning. There is not much description on Gorba melts, but we know they were often stored on the Millennium Falcon for a quick bite. I have envisioned these as a mushroom burger/sandwich with provolone cheese. I hope you enjoy this veggie grilling alternative!

Ingredients:

Portabella mushroom caps (enough for however many you wish to serve, one cap per person)

Olive Oil

Garlic Powder

Salt and Pepper

Thin sliced Provolone cheese

Mayo

Dried Oregano

Your favorite burger bun or sandwich bread (I recommend a thin type of bun)

  • 1.Prepare the mushroom caps- gently wipe off any dirt with a very damp paper towel. With a small spoon, gently scrape out the mushroom gills.
  • 2.Drizzle each side of the cap with olive oil. Sprinkle salt and pepper on each side, and lightly dash one side of the cap with the garlic powder.
  • 3.Place the mushroom caps on a medium heat grill. Watch the caps very carefully; they cook quickly, perhaps 2 minutes per side. After flipping the cap over once, place the cheese on the flat side of the cap to melt.
  • 4.Toast your bread/bun to desired crispness. Remove mushroom cap from grill, place on the bun. Spread mayo on one side of the bun, and sprinkle the oregano gently on the mushroom cap. And…you’re done! Time to eat!
