It’s been awhile, but I have returned! (Insert John William’s epic Episode IV Throne Room/End Title Theme here).

Anyhow, as we have not yet entered the books of the official cannon Expanded Universe, I shall continue with food and drink from the Legacy Expanded Universe. Today’s recipe is based on a side item called Yoba, first mentioned in the superb novel Legacy of the Force: Invincible by Troy Denning. Yoba is not described other than as a side that was served along with a main course. In the book, Taryn Zel (a Hapen security agent) served Ben Skywalker a meal of nerf steak with yoba with a glass of goff-milk during his rescue and removal from Nova Station. I picture yoba as a creamed spinach type food, so that’s what recipe we have here.

Yoba

Serves 4.

Ingredients:

2 boxes of frozen chopped spinach, thawed

2 TBS butter, cut into small pieces

½ cup heavy cream

1 small shallot

Salt and pepper

Cayenne pepper

  • 1.Make sure to drain the thawed spinach thoroughly. I recommend placing the spinach in a clean dish towel and wringing it out. In a small skillet over medium heat melt the butter and stir in the minced shallot. Cook until the shallot is translucent in color.
  • 2.Add the heavy cream to the skillet. Heat until the cream starts to bubble. Add in the spinach, stirring well. Reduce the heat to low, cook about two minutes.
  • 3.Stir in a small pinch of cayenne pepper, as well as salt and pepper to taste. Serve alongside your favorite protein and enjoy!

Optional: Feel free to stir in a couple tablespoons of a good cheese, such as Parmigiano-Reggiano or Gorgonzola as well.
